meals for the week 11.4.12 through 11.11.12

hi everyone :)
sorry for the hiatus...  had company for about 1 1/2 weeks...a birthday party...computer issues.... :)  and even went to bed with the kids for 2 nights b/c i was tired :)  neglected blog....but i'm back :)

i have lots i could write about, but for today, i'm just going to get our meals for the week up and out there...  i haven't meal planned in the last few weeks since we've had company and we tend to eat out more to keep things a little more simple at the house... :)  i'm tired of eating out...i'm tired of food, actually, so i'm glad to get back to some "home cooked" meals... :) 

here's what we'll be eating for the week...

Sunday: breakfast for dinner :) chocolate chip pancakes, eggs, and hash browns :)
Monday:  macaroni soup and grilled cheese
Tuesday: homemade pizzas with our friends, the Angottis :)
Wednesday: church meal - italian night :)

Thursday:  tacos
Friday:  leftovers
Saturday: probably dinner out
Sunday: crockpot meal - probably roasting a chicken and some fixins :)

i feel so blessed and thankful for the ability to make food for my family...as well as every "facet" of that process....  Hurricane Sandy's victims weigh heavily on my heart...  such devistation :(  lift them up in your prayers and thoughts, my friends...  they need a healing touch and comfort....

Happy 4th Birthday, K :)

oh, what a ride it has been....
so wonderful and amazing... :)
and i remember her arrival just like it was yesterday...
thankfully, my mind has erased (?) the pain...
but i remember the long 23 1/2 hours of labor with her...
and being so surprised that she was a girl (i was convinced i was having a boy)
and i remember crying after i got to my hospital room...
because she was just incredible...
and i was being trusted with this sweet, sweet angel...

she is our angel...  in so many ways....
she changed my focus in life...
and we made changes here at home so i could be
with you every single day....
watching you grow and learn and giggle....
and we just fell more and more in love with you every
single day....
your smile is pure joy :)
your curiosity is relentless...
your intelligence is incredible...
you have provided so much wonderment to each and every day...
and like people always said, "you'll never know what you did in life without her..."
and that's the truth... 
you bring lots of giggles...and your stories are so creative and fun...
you love music...and singing and playing instruments...
you love playing outside...and sitting for long periods of time coloring
quietly at the kitchen table...
you love princesses...Cinderella, Ariel, and Rapunzel are your favorites...
and you can act out and speak, verbatim, the lines from your princess movies...
you are still a picky eater...but you will do almost anything for a special treat...
 
you are a wonderful big sister...you care passionately for Hannah, who thinks the world
revolves around you.  you are almost always patient and kind to her...and i love your
growing love and close relationship with her...
the last 4 years have been such a tremendous blessing...
and i've learned so much about myself...yes, even things that i'm
not so proud of... 
but, one thing is for sure...
becoming your mom has been one of the greatest
and most incredible blessings and gifts i've been given in life...
and we celebrate you, lil one...
happy birthday, sweet Katherine... :)

meals for the week 10.14.12 through 10.21.12

quick and simple this week, my friends :) 
no words of advice...
no comments about the weather... :)
i have a few minutes...some banana muffins are in the oven...
so i thought i'd post :)

here's what's fillin' our bellies this week... :)

Sunday: whatevers - Ry has BETA ceremony, so the girls had mac n cheese and i had a fully belly from a late lunch with a friend :)
Monday: Ry has conferences, not home (again!)...  french toast (girls) and a ham, cheese, green pepper, and onion omelet :)
Tuesday: leftovers - pizza and pork tenderloin from lunch on Sunday
Wednesday:  fellowship meal with church :)
Thursday:  raviolis :)
Friday: grill out - hot dogs, mac n cheese, and veggie
Saturday:  out to eat
Sunday:  Salisbury Steak and au gratin potatoes (didn't get to it last week) :)

random joe...

ya ever have one of those days where things just float around in your head constantly?  i do...all the time... :)  one thought leads to another thought...and another... :)  it's days like this where i have a lot of trouble praying at night for my kids...cause as i'm praying, i start to think of something else....and then 3 minutes later, i remember that i'm supposed to be praying............. :)
so...here's some random joe for you on this thursday :) and maybe a few pictures :) 

  • today, i put the down comforter on our bed... i love the white of a down comforter, but with 2 kids and 2 adults, it's not logical :)  so we have a beautiful green duvet cover...  K didn't know i put it on, but after her bath (we usually get PJs on on mommy's and daddy's bed), K exclaimed, "Mommy, the bed is like a HOTEL...." and she sunk into the down comforter with a huge smile on her face :)

  •  i hung some halloween-ish lights in K's room for her while she was out playing with Daddy and Hannah this afternoon...orange on one window and purple on the other :)  she would run back every so often to just look all evening...  however, it was not enough to convince her to sleep in her room after the "hotel" bed was discovered :)  (yes, we're the parents who let our kids get into bed with us at night sometimes....)

  • we went to Target today to pick up a few things...  K and H rode in one of those carts with a "bench" before the cart (thus making the cart 10 feet long! oy!)...  K was petting Hannah's head for some of the ride...i found myself saying, "please do not touch your sister...." a lot :) 
  • i went to Target today without any make up :-\ i realized that i didn't have any on about 4 minutes into our trip...and the sheer thought of trying to go home, explain WHY we were going home quickly, unloading the kids from the car seat, etc. was too much for me...  i figured a self-conscious trip to Target was worth it... :)

  • i had a dream the other night about pulling a very large carrot out of my garden...strange since i didn't plant carrots...  and by large, i mean like a yard long...  strange............
  • Hannah doesn't say a whole lot, but she does have an emphatic head shake...she is not shy about telling you "no." :)  and her "yes," for those of you who wonder is merely a mid-tone "mmmmmph."
  • Katherine took a dance class the other day... :)  our good friends have a daughter who takes dance and it was "bring a friend" night.  K had a ball...and she walked in there, with total confidence, and practiced tap dance and ballet :)  she was in heaven....a huge smile on her face. :)  when asked if she wanted to start taking dance, she told me "no" but couldn't tell why she didn't want to take it...  when we got home, Ry talked to her about her class and she gave the same information...it was a lot of fun, blah, blah, blah, but when he asked if she wanted to take dance, she said no....  he probed by asking her, if she had fun, why wouldn't she want to take dance...  her reply was a clenched jaw/teeth face, saying, "okkkkkkk, i will take it, i guessssss."

  • i'm disgusted with the whole election this year...  i am tired of the commercials...i'm tired of political parties calling my house....i'm tired of people coming up to me asking me who i'm going to vote for after asking me if i'm registered to vote...  but most of all, i'm sick of people putting stuff on facebook...  opinions are opinions...but people go too far beyond that and literally trash anything that another person might believe...  it's shallow...  i can remember, as a kid, always asking my mom who she was voting for, and she would always tell me that it was a private thing and she would never say...  i respect that...

  • Hannah and Katherine love to color...  Katherine will color for awhile, and she's quite good...  Hannah will climb up on the chair five hundred times, each time giving her page a color scribble.  I've nick-named her "Zorro." :)

meals for the week 10.8.12 through 10.15.12

well, last week i was praising the weather...this week, i'm freezing!  we've had a 20-30 degree change in temperature in the last few days...wowzers!!!!!!!!!  the mercury was hovering in the high 40s today at lunchtime...and with a cold rain making it feel even colder...i am wishing for the pretty fall days we were having! :)  i am going to be patient, though, because the weatherman reported that we'll warm up some in the next few days... :)

i don't have a lot to report...enjoying the every day as much as we can... :)  lots of playing, coloring, running around outside.... :)  of course, laundry, cleaning, and trying to keep up with other household duties.... :) 

we bought some items for the Blue Ridge Area Food Bank...our church youth are looking to give at least 1,000 items in the next few weeks, and we were excited to give...  the area food banks, perhaps in your area, too, are in tremendous need...more families are in financial turmoil, and they need the basics so they can feed their family...  it's not just food, either...it's also personal care items that are needed - soap, shampoo, etc.  if you can, please considering throwing a few items into your cart this week so that you can also donate to the food bank around your house...  you can also go through your cabinets and get rid of things that you have in abundance or that you haven't used...  we are not rich people, but we never go without...we live in a more than abundant condition...  plenty of food passes into our mouths, and we could honestly cut back quick easily...and we should, too ('cause those numbers on that scale are creepin' up!!!)...  please consider donating!!

meals for the week 9.30.12 through 10.7.12

i'm thinking about that Staples commercial that comes on in late July...you know, the one where the mom is dancing in the aisles as the kids sit, sad faced, in the cart, as they shop for school supplies...  and, blaring in the background is, "IT'S THE MOSTTTTT WONDERFULLLL TIME OF THE YEARRRR."  :)

i LOVE Fall...autumn...whatever you wanna call the season...it is an incredible time of beauty and peace for my soul...i'm starting to see the leaves change ever so slightly here...  one tree, only about 4 houses up the street, is already a beautiful shade of orange red....breathtaking...  (and don't you wonder how, a tree mere feet away from your tree, which is the very same species, has leaves changing where, your own tree, is still green?  hmmmm) 
anyway, i will probably have to load the kids up in the van and go for drives in the afternoon because i probably won't be able to get enough of the amazing views around me... :)  it's so easy to send praises up when i see the beauty that's around me...

last week, we had a really crazy week...and much of what was planned for meals fell by the wayside...  we had illnesses and concerts...birthday parties...an impromptu trip for Chinese with our friend....it was a week where, honestly, every day was spent doing something in the evening...  and, well, let's just say that the dogs and the outside kitties had some serious feasting on leftovers before they went bad...  *meow*woof* :)
so, the meal plan was not happening...  that means we hardly grocery shopped this week, though...so, as you will see below, much of what was on last week's menu will be seen again :)

Tuesday: chicken noodle soup :)

fajitas in the crock pot

had a little change in the meal plan on Sunday and had to come up with something else on hand...  i had noted a recipe on pinterest, i had the ingredients, and so, i decided to try it.... :)

this was SUPER easy, moms and hard working people....  it would probably only take about 5 to 10 minutes of prep work for you...unless you're like me and had to microwave the chicken to get the annoying styrifoam and the little "pad" off of the frozen chicken... :)  that's what took me the longest... :) and, for the little time you spend throwing it in the crockpot, you sure are given an awesome meal once it is done cooking...wow! :)  what a treat! :)

here are the steps... :)

-chop up some green/red/yellow (all, some, only one color - you pick :)) into strips... 3 peppers is a good amount...  throw it in the bottom of your crockpot...
-sliced up an onion or two (i like a lot of onion and used sweet onions) and put it in with the peppers...
-use about 1 to 1.5 lbs. of chicken breast (i used tenderloins b/c that's what i had on hand), whole, and put that on top of your veggies...
-pour 1/4 to 1/2 cup of chicken broth over your veggies and chicken...
-mix together 1 1/2 T. of chili powder, 2 T. cumin, and 1/2 t. salt (i didn't add this) and sprinkle over the chicken/veggies...  (i also added some cajun seasoning and several shakes of garlic powder to my spices...)
-squirt some lime juice over the veggies/chicken (i did this at the end a few minutes before i served it)
-set your crockpot to low for 8 hours (or high for 4-6 hours)...it will make your house smell so good! :)
-after cooking, use two forks and shread your chicken into pieces and mix all together in the crockpot...let it sit for a few more minutes...

spoon the mixture (use a slotted spoon if there's a lot of liquid) into some tortillas and top with your favorite fajita toppings...we did salsa and cheese :) 

ENJOY! 

these were so good...and so flavorful...  :)  can't wait for leftovers because i would imagine that, with a day or so of rest, the flavor will be even better! :)

to make this even easier, grab yourself two or so bags of the already chopped fajita veggies - peppers and onions - in the frozen veggie section of your store... :)  then, it will take you about 2 minutes to throw together :)

hope that you all have a wonderful week... 
heard a great sermon at church on Sunday...and while i try to be pretty conscious of this anyway, i am going to work extra hard to give praise about how much i have to be thankful for this week... 
like having the ability to buy food to make dinner...
like having the ability to get up in the morning...
like having two little girls to keep me busy all the time.....
like having seemingly endless loads of laundry to do for my family...and a washing machine and a dryer to do it in... and a clothes line, too!! :)

we really are blessed in ways that we don't even realize, often... 
so that's my goal for the week...
find the blessings and give praise for them...

Miss Sass makes life exciting... 
sometimes the excitement is funny...or even makes a momma like me feel proud...
sometimes it's humbling...or embarrassing.....

i was reading a blog a few weeks ago and the writer noted (and not in a bad way) how she was seeing the sinful nature of her kids...and how it was a great time to teach her lil ones about Christ and forgiveness...  well, i see the sinful nature of myself, a lot....and i also see it in my kids...  and we're working on improving our behaviors, as well as using the moments to teach...

after church today (of all places *sigh*), i went to pick Sassy up from her Sunday School classroom.  the two teachers who were working this week are always so sweet...  K was excited to show me a picture of Tangled (Rapunzel)...  they informed me that they heard all about "Tangled" during their time together...  yes, i assured them that her unyielding love for Rapunzel was ever apparent in our lives, too... :)  and i may have said that with a little eye roll :)   

then one of the teachers mentioned that K shared her little sister's nickname today...  i kept my smile on my face and told them that, yes, we did have a nickname for Hannah...Bugs.  i'm not 100% how she came into that name...but we've called her Bugs since she was born...in a totally endearing way, of course... :)  i reiterated this story to the teachers...  but the one who started the nick name conversation says, "oh...well, she told us that you call her little sister "Little Booger."" 
i was kind of taken back for a few seconds... 
first, we don't even use the word "Booger" in our house...  i have used the word "Boogie," but we don't say booger...  and it's really not a BAD word, but it doesn't paint a very nice picture in my mind...we've never used it... :)  and, i'm not even sure where she picked up the word, "Booger," quite frankly...let alone how she was able to use it in a very entertaining(?) yet untrue story about nick names and her little sister...  (and yes, i'm sure that in 10 years, at the height of teenager-ness, i will be glad if a nice word like "booger" is used in name exchanges between the two of them (as compared to what could be used, i suppose) :o) )

so we talked about this, of course...albeit a pretty short conversation (this time).  I asked K if she even knew what a booger was...and she said, "No, but it's funny...."  and she concluded that this is why she said it...because "booger" is a funny word, or so she declared...  and then she went skipping away to see her daddy... 

looks like i know what we'll be working on this week...  :)  fibs.........

silver linings

one of the ladies (i had to change this from "girls"...she's a baby!  she may be in her late 20s...) i used to teach with, along with her family, suffered a tragedy last week...her house burned and their belongings were destroyed, as well...  they're a young family...and they have 2 small children - a 6 year old and a 3 year old... 
i can't imagine having to rebuild a house...
and i can't imagine having to purchase all new belongings...
neccessitites...and toys...
i can't imagine helping my kids deal with this...
she's an incredibly talented cake decorator, too (and it probably helps that she's an art teacher :)), and she even lost her cake and decorating supplies...

they're believers...and i know that has to give them some comfort...
and, it's probably hard to see any silver lining in these events...
but, amazingly, she has found glaring examples...
she's shared 2 very powerful examples of "amazing" from the past several days...

her son, who is 3, was at school on Friday.  another child commented on the color of the leaves...that they were like the color of fire.  her son replies, "my house got fired and all my toys are gone." Then he got really quiet for a few moments and said, "but God is great and God is good."
he's 3....  wow....

and, today, Katie shared a beautiful "poem" that was written on a card she received....

weekly musings and meals for the week 9.17.12 to 9.23.12

it hit me that this is the last "week" of summer, at least as far as the calendar/earth's revolution says...  that's really hard for me to believe....  i can't say that i'm sad, though...i LOVE the fall...the crisp air, the colors, pumpkins, holidays....it's a wonderful time of year... :)

of course, fall means that our meals change a little, too...  i could live off of soup, i think :)  and fall means lots of soups for us... :) 
i'm a little sad, however, to say goodbye to our summer...  that little princess pool leaning against our maple tree in the front yard needs to be cleaned a bit and then put away for the cooler weather...and the princess swimmy rings....  the water table...  my kids have really enjoyed playing with water (well, Bugs has taken a little longer to appreciate the wet stuff)....  summer will be here before we know it again...so i will be thankful for the change of seasons :)

our meals will be a bit simple this week... :)  and, as the "head cook," i'm fine with that :)  and i'm liking the "fallish" touch, too... :) 

Monday: lots of a little bit of leftovers - meatballs, salad, mac n cheese, etc. (basically, empty the fridge of leftovers!)
Tuesday: open face pork tenderloin sandwiches, mashed potatoes, gravy, veggie
Wednesday:  church supper :)  (pork BBQ and the fixins)
Thursday:  Outback potato soup (new recipe :))
Friday: raviolis
Saturday: grill out
Sunday: tacos

banana bread brownies

i'm an admitted pintereset surfer...  and i love it.  while it can be addicting, i find so many neat and creative ideas that i can use with my kids, decorating, crafts, and yes, cooking :) 

we tend to have a few overripe bananas left each week...  for some reason, the girls will not eat "squishy" and very ripe bananas...and well, they're not my absolute favorite either... 
i saw this recipe on pinterest a few weeks ago...and i dreamed of making it...  i don't even know why they're called "brownies" because there is nothing "brownie-ish" about them...except that they're in a brownie-like pan...  but, basically, this is a hearty banana bread with an AMAZING icing...
and honestly, it's not the most "healthy" recipe... 2 sticks of butter... :)  but it's worth it... :) 
they're "heavy," too (haha, no pun)...very filling in small amounts.  while i could have eaten a lot more than i did, it's a great little treat to share with a neighbor or a friend.... :)  it will brighten their day...just like it will brighten yours :) 
(recipe and photo are from Life's Simple Measures and i notice she calls them "bars" on her site, not brownies, but on Pinterest, they're brownies :))


Ingredients:

Banana Bread Bars:
1-1/2 c. sugar
1 c. sour cream (i used light)
1/2 c. butter, softened
2 eggs
1-3/4 (3 or 4) ripe bananas, mashed
2 tsp. vanilla extract
2 c. all purpose flour
1 tsp. baking soda
3/4 tsp. salt
1/2 c. chopped walnuts (optional)
Brown Butter Frosting:
1/2 c. butter
4 c. powdered sugar
1-1/2 tsp. vanilla extract
3 tbsp. milk

Directions:

1. Heat oven to 375F. Grease and flour 15x10-inch jelly roll pan. For the bars, in a large bowl, beat together sugar, sour cream, butter, and eggs until creamy. Blend in bananas and vanilla extract. Add flour, baking soda, salt, and blend for 1 minute. Stir in walnuts.
2. Spread batter evenly into pan. Bake 20 to 25 minutes or until golden brown.
3. Meanwhile, for frosting, heat butter in a large saucepan over medium heat until boiling. Let the butter turn a delicate brown and remove from heat immediately. (watch this carefully...it happens quickly!)
4. Add powdered sugar, vanilla extract and milk. Whisk together until smooth (it should be thicker than a glaze but thinner than frosting). Using a spatula, spread the brown butter frosting over the warm bars (the frosting will be easier to spread while the bars are still warm).
 
Yield: 2 dozen large bars

thursday: spaghetti and meatballs, salad, and italian bread
friday: homemade pizza
saturday: meatball sandwiches
sunday: crockpot something or other - maybe potato soup... :)



here are some shots from when we were still having warm, summer days...  we're still having summer, but the temperatures have cooled a bit, and we're not spending time playing in the pool or sprinkler right now :)  but, we haven't put the water stuff away....i have a feeling we're not finished with warmish weather yet :)

Hannah is not a water baby (yet), especially compared to Katherine...  she did come a long way from standing at the sprinkler with a leaf, just reaching in enough for the leaf to get wet.  that was early this summer...  :)  she is more mechanical and likes trying to take the sprinkler apart, spraying something with the hose or something like that.... :)  here, she probably sees a car coming...the town watch, without a doubt :)

 Katherine, of course, would probably try to become one with the water if she could...  she would play in a pool for hours... :)  while this picture looks a little pixelated, the joy on her face here says it all... :)  and, her sweet ears... :)  i love them :)

it's time for me to get back into the blogging saddle...
i don't really have a good excuse...
life is just busy...and it was too easy to put this off
my girls keep me busy from waking till their eyes close at bedtime...
and summer happened...
and summer translates to lots of traveling for this family...so much traveling that we long for school to start again so we can go home and not leave again for awhile... :)
and my "to do" list of the summer never seemed to come to an end...and it's still full!
and i haven't even downloaded pictures off of the camera in months.......
and i don't know how to get the pictures of my silly cell phone without emailing every single one (argh)...

but i still need to keep this up...  i enjoy it too much, and well, it helps me put down the things that i will forget if i don't write them down and document...

so, it's time....  it's time to get back into the swing of blogging... :)  and for the few of you who read and care (?), thanks for being patient... :)

meals for the week 5.6.12 through 5.13.12

time to get back into posting the meal plan...  it helps keep me more organized... :) 
here's what we'll be eating this week... :)

  • Sunday:  beef and potato boats, green beans, broccoli corn bread
  • Monday: baked ziti
  • Tuesday: pigs in a blanket, mac n cheese, veggie
  • Wednesday: leftovers
  • Thursday:  pancakes
  • Friday: leftovers
  • Saturday:  out to eat or scrounge at home :)
  • Sunday:  chicken parmiginana and spaghetti

it's been awhile...

nothing like a long, long break from blogging.... :)  life has been a little busy...  :)

we enjoyed some time over spring break NOT traveling... :)  instead, we had my parents here for Easter...  the visits with our grandmas and bebots are always too, too short....  we had lots of fun, though....we did some shopping, went to church, had yummy meals and enjoyed each other's company...  :)

(katherine calls both grandmas "grandma," but she specifies each one by one thing that she realized while she was very young...my parents have a dog, Daisy, so my mom became "grandma daisy."  Ry's mom is "grandma boot" because K calls her Aunt Brittany "Boot"... :))
the girls were so cute in their Easter dresses....yep, i did what i never thought i'd do and dressed my girls in the same dresses :)  they were really cute :)


(i won't even tell you how long it took us to get this picture of the two of them together...  katherine was being especially cheesy and was bouncing like tigger, hannah was crying and falling down because her sister insisted on holding her hand while bouncing like tigger...and they needed naps :))

then, Ry's mom, dad, and sister came into town and we all hung out and enjoyed each other some more. :)  we had yummy food and cooked at home, too... :)  of course, we did a little shopping, and we made chocolate covered strawberries and cupcakes...yummy! :)

we've been busy playing outside (when it wasn't raining)...katherine loves being outside, but i think that hannah may love it even more...  she cries to go outside and cries even harder when we come inside...  :)


we have done a little gardening...we planted some bulbs and also planted a little garden! :)  all we have in our garden are strawberries right now, but i'm going to add a few more things...  katherine LOVES to go out and check out our plants...it's been really fun to see how well our things are growing :)

since october, i've been working as a teacher for an after school program in the county where i used to teach... it's been a great experience, and i've really enjoyed helping kids...  i'm not ready to get back in the classroom, but i hope that i can do their after school program again next year...  the hours are perfect (i drop the girls off after ry finishes his day and head up the road a few minutes to school) and it's good to help! :)  unfortunately, it ends this coming week, but i'm sure i will find SOMETHING to do with my extra time :)


now, because my teaching license has to be renewed every 5 years, i'm in the first week of taking a 3 credit course for recertification...  i had taken another course in the fall of 2010 for half of my points, and i thought i had enough professional development from 2008 and 2009, while teaching, but i kept shoddy records and can't even find them in my files of packed school items :(  so, i'm taking a literacy class on teaching phonemic awareness and phonics....it's really interesting...  :)  i'm especially excited to start using my new-found knowledge on a little guinea pig i know... :)  (i really wanted to take this class so i could learn what i should be doing for K... :))

in the midst of all of this, we've had vet appointments, trips to the store, time with our friends, dentist appointments, and just plain attempts to stay afloat in this trip called life :) 

but........summer is knocking...Ry only has 21 days left with students...  i always love summer because we can do so many fun things together as a family and life is a little more relaxed.... :)

i promise i will be back sooner than i was this time... :)  there's always a ton to report, but time is fleeting and i never get to share all the happenings.... :)
